However, the cell membranes are destroyed during squeezing, concentration, storage and other processes, and oxidation occurs with exposure to open air. This causes the natural flavor to rapidly lose its freshness. When MONOFUMAR™ is added in this state of lost freshness, there is an adequate reduction action as a result of a double bond with MONOFUMAR™. The effect is to preserve the oxidation-reduction potential required for fresh juice and maintain the fresh flavor.

Natural Acidity of Natural Fruit Juice from Buffer Effect

When MONOFUMAR™ is added in this state of lost freshness, there is an adequate reduction action as a result of a double bond with MONOFUMAR™. It was discovered in 1550 by the German chemist Georgius Agricola, who was the first to purify it from amber by dry distillation. Succinic acid is useful, non-toxic, stable and harmless to the human body. It is generated in a citric acid cycle (succinic acid dehydrate enzyme) and a succinic acid-glycine cycle through the process of metabolism, and eventually becomes energy. Succinic acid is industrially produced by the hydrogenation of maleic anhydride.

The succinic acid manufactured by Nippon Shokubai was launched in 1950.
